Refried Bean Dip isn’t the first food I think about for parties or game day and I’m not sure why. This one is so easy that it needs to be a new go to for me.  I always have the ingredients for the recipe on hand, it comes together in a couple minutes, and is ready just as quickly because of the microwave. What’s not to like?

While the microwave saving cooking time is the obvious reason for making this dip, there are few other reasons as well.

The Ingredients Are In Your Pantry – The ingredients are pantry staples for most people or easily found at the grocery store.

It’s Customizable – Add spice for heat, fresh jalapenos or these pickled jalapenos, change up the cheese or add additional toppings. It’s completely up to you.

It’s Inexpensive – Total cost for the dip should run around $5.00 or less. That makes it affordable to take somewhere or feed people when you’re entertaining.

Microwave Refried Bean Dip

Ingredients

  • 1 16 oz. Can Refried Beans
  • 1 4.5 oz. Can Chopped Green Chiles
  • ½ tsp. Ground Cumin
  • ½ tsp. Garlic Powder
  • ½ tsp. Onion Powder
  • 8 oz. 2 cups Shredded Mexican Cheese Blend
  • ½ Medium Red Bell Pepper, Chopped
  • 1 Jalapeño Chile, Sliced, Optional
  • Chopped Fresh Cilantro, Optional

Instructions

  • In a 9 inch microwave-safe pie pan or casserole dish, combine beans, green chiles, cumin, garlic powder, and onion powder and spread evenly in pan.
  • Cover with microwave-safe waxed paper and microwave on at full power for 2-2 ½ minutes until the dip is warm.
  • Sprinkle with cheese and top with bell pepper and jalapeño, if using.
  • Re-cover and microwave on full power for an additional 3 to 4 minutes or until cheese is almost melted.
  • Carefully remove pie plate from microwave and remove wax paper.
  • Let dip stand 2 minutes. Sprinkle with fresh cilantro, if using.
  • Serve with tortilla chips.
