Here’s a quick and easy gluten free dessert. Gluten Free Choco Scotch Bars. Chocolate and butterscotch chips are melted with a little peanut butter and mixed with crisp rice cereal. Then, they’re pressed into a baking pan and cut into squares. This recipe takes minutes to make and is perfect for lunch boxes and pot lucks.

What are Choco Scotch Bars

Choco Scotch Bars is a recipe that starts with Kellogg’s Rice Krispies and is made into individual clusters. Chocolate and butterscotch chips are melted with peanut butter. After adding in the Rice Krispies, the mixture is scooped onto parchment paper.

There are only two problems with this recipe. Making clusters takes more time than pressing the mix into a pan and Rice Krispies aren’t Celiac safe.

Do Rice Krispies Contain Gluten?

Yes, Rice Krispies contain gluten. The cereal contains an ingredient called malt syrup. Malt Syrup is most commonly derived from barely, which contains gluten. It should not be consumed by Celiacs or those eating a gluten free diet.

Ingredients

  • 1 Cup Semi-Sweet Chocolate Chip Morsels
  • 1 Cup Butterscotch Morsels
  • 2 Tbs. Peanut Butter
  • 4 Cups Gluten Free Rice Cereal
  • Softened Butter or Cooking Spray

Instructions

  • Place the chocolate chips, butterscotch chips and peanut butter in a large microwave safe bowl.
  • Microwave the chips and peanut butter for 30 seconds on high and stir.
  • Heat for another 30 seconds on high and stir again.
  • Heat for about 15 seconds more. At this point, the chips should be almost melted.
  • Stir the warmed mix until the remaining chips melt. You do not want the chips to overheat.
  • Add the rice cereal to the chocolate butterscotch mixture and mix well.
  • Spread and press the mixture into the prepared pan using a spatula or clean hands.
  • Chill in the refrigerator for 30 minutes.
  • Remove from the refrigerator and cut into squares.
  • Store in an airtight container.
