Apple Pie Chex Mix in Bowl

Chex Mix is a favorite snack but how about a sweet spin on it? How about Apple Pie Chex Mix? Chex, butter, brown sugar, and freeze dried apples gets mixed with warm spices that include cinnamon and nutmeg. It’s a recipe perfect for Christmas or Autumn.

I have loved Chex mix since I was a kid and around the holidays, homemade versions pop up more often. I recently had a cinnamon sugar version that was pretty tasty. It worked well for Tara because the recipe only uses rice Chex making it gluten free. It was so addictive, I started thinking about what I could do to amp it up even more. Apple Pie Chex Mix was the outcome.

Apple Pie Chex Mix for Fall and Christmas

There isn’t anything wrong with savory Chex mix but I think this Chex mix recipe is a perfect option for Fall, Christmas, and beyond!  Why? It’s when we think about apples, warm spices, and pies. It’s also some sweetness to cut through all of those rich and comforting foods that are common this time of year.

What ingredients are in this Sweet Chex Mix Flavor?

This sweet snack has Chex, butter, brown sugar, white sugar, and warm spices in it. These ingredients are probably already in your fridge and pantry. The apples are one ingredient that you may need to pick up at the store though.

For the apple portion of the Apple Pie Chex Mix, I use freeze dried apple chips. I use them in two ways. First, I take some of the apple chips and make an apple powder using a spice grinder.  This lets the apple flavor get through the entire batch of snack mix. Then I take the rest of the apple pieces and mix up with the other ingredients.

Apple Pie Chex Mix Tips

If you’ve ever made Homemade Chex Mix, you probably have a pretty good idea of how this recipe goes in regards to the directions. You’re right, it’s pretty much the same format as other recipes but here are a few tips that I found helpful for the sweet version.

Apple Powder

A Spice Grinder – I have two spice grinders in my kitchen. One for coffee beans only and one for things like spice grinding. They are inexpensive and come in handy for recipes like this one. You can find an inexpensive spice grinder HERE.

Use Parchment Paper – Sticky recipes like this Chex Mix or my Two Ingredient Coconut Macaroons are when parchment paper comes in handy. Cleaning the sheet pan becomes almost non-existent with this non-stick item.

The Mixture Isn’t Smooth – The butter and sugar mixture isn’t completely smooth and that’s ok!  Mix the Chex and apples with the wet ingredients together until coated. Some of the Chex pieces will have more coating than others because the mix isn’t completely liquid. It all bakes up fine in the oven.

Use the Rice or Corn Variety for a Gluten Free Chex Mix – I use Rice Chex in my recipe but Corn Chex also works. Both of those varieties are gluten free.  Just remember, corn has a stronger taste than rice and you may notice a slightly different flavor.

Apple Pie Chex Mix

Ingredients

  • 8 Cups Rice Chex Cereal
  • 2 1.5 oz Bags of Freeze Dried Apples, divided
  • 9 Tbs Butter 1 stick and an extra tablespoon
  • ½ Cup Brown Sugar
  • ¼ Cup Granulated White Sugar
  • 2 tsp Ground Cinnamon
  • ½ tsp Ground Nutmeg
  • 1/8 tsp Allspice

Instructions

  • Preheat the oven to 275º
  • Line a large baking sheet with parchment paper.
  • Take 2/3 of one bag freeze dried apples and grind it up in the spice grinder into a fine powder.
  • Pour the Chex and remaining apples in a large bowl along with the full bag of apples.
  • In a medium sauce pan, melt the butter.
  • Add both sugars, apple powder, and all the spices to the sauce pan.
  • Mix until the sugars and spices are mostly dissolved into the butter.
  • Add the butter mixture to the Chex and Apples and gently combine until coated.
  • Place the Chex Mix onto the prepared baking sheet.
  • Bake for 45 minutes, stirring every 15 minutes.
  • Let cool before storing.

Notes

  • The Chex Mix will crisp back up as it cools.
  • Store in an airtight container.
