What’s a key ingredient the foods Fluffernutter Sandwiches, Lucky Charms, Rice Krispie Treats, and S’Mores?  It’s Marshmallow of course! What would happen if we Marshmallow Pindidn’t have marshmallows? There wouldn’t be anything to hold Rice Krispies or S’Mores together. A fluffernutter sandwich would just be a peanut butter sandwich. Finally, Lucky Charms would be…………….Okay, let’s not even think about how bad that would be. These foods all require marshmallows or they wouldn’t be the foods that people love. This key ingredient can easily be bought at the store but have you ever had a homemade one?

I didn’t ever think that Marshmallows would be something I made from scratch. It seemed easier to just buy a bag off the shelf. One day, Tara and I got invited to a BBQ. We were asked to bring a dessert. My girlfriend suggested s’mores and the host basically responded with a “Really?? We’re fine with that but aren’t s’mores too basic for Jamie? What’s he going to do? Make his own Marshmallows?” It sounded like a challenge to me, so making them from scratch is exactly what I decided to do. They were a big hit at the BBQ and made awesome s’mores.

To be honest, it is easier (and cheaper) to buy a bag of marshmallows at the store, but sometimes, the easy way isn’t always the tastiest.

Making marshmallows can be a little intimidating but, if you can follow a recipe, you’ll have no problems making these at home. The recipe I use to make these is an Alton Brown recipe. Ingredients

  • 3 packages unflavored gelatin
  • 1 cup ice cold water, divided
  • 12 ounces granulated sugar, or just under 1 ½ cups
  • 1 cup light corn syrup
  • ¼ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • ¼ cup confectioners' sugar
  • ¼ cup cornstarch
  • Nonstick spray
