The Chicken – Use anywhere from 1 to 2 pounds of chicken for this recipe.

The Queso – For the recipe, I used Great Value Shredded Queso Quesadilla Cheese that I got at Wal-Mart. If you can’t find the cheese I used, try using another cheese that melts well like Monterey Jack or Asadero Cheese. A Gluten Free Cheese Dip may work as well!

Tomato Options – Use a jarred salsa that you like in regards to taste and heat level. Mexican seasoned canned tomatoes with green chiles would work as well.

Gluten Free Taco Seasoning – If you can’t find gluten free taco seasoning, use 3 Tablespoons of my Homemade Gluten Free Fajita Seasoning.

Shredding The Chicken – Two forks shred up chicken pretty easily. A meat chopper like this one, works great as well. I use it all the time for browning ground beef and bulk sausage.

Serving It Up – Serve Gluten Free Crockpot Queso Chicken as a dip, in hard taco shells with taco toppings or over rice.

Ingredients

  • 1.5-2 Lb. Boneless,Skinless Chicken Breasts
  • 1 Pkg luten Free Taco Seasoning or 3 Tbs of homemade seasoning
  • 1 8 Oz. Pkg Cream Cheese, Cut Into Pieces Or Sliced
  • 1 ½ Cup Jarred Salsa Or 15oz Can Mexican Seasoned Diced Tomatoes
  • 16 Oz. Shredded Queso Quesadilla Cheese Or Other Good Melting Cheese.
  • Optional: Favorite Taco Toppings Such As Lettuce, Tomatoes, Jalapenos, And Cilantro

Instructions

  • Spray the crockpot with non-stick cooking spray.
  • Place the chicken in bottom of crockpot.
  • Sprinkle taco seasoning over the chicken.
  • Place the scream cheese over the top of the chicken.
  • Pour the salsa or canned tomatoes over cream cheese.
  • Sprinkle the queso cheese over the tomatoes.
  • Cover crockpot with lid and cook on high for 3-4 hours or on low for 6-7 hours until the chicken is cooked through.
  • Shred the chicken in the crockpot with 2 forks or a meat chopper.
  • Serve as a dip, in hard taco shells with taco toppings or over rice.
