Fajita Nachos

Have Nachos for Dinner! This Chicken Fajita Nachos recipe is the perfect mash up of nachos and fajitas. Juicy chicken, sautéed peppers, and onions gets topped with your favorite nacho toppings. It’s a gluten free Mexican dinner that pleases everyone.

It seems like we always have ingredients for Mexican dinners at home. Tacos and nachos are common every other week or so. Making chicken fajita nachos gives a new spin on the usual dinner.

The recipe adjusts easily to your family’s needs and likes. I’ve got a few ideas below before getting to the recipe.

Fajita Nachos Recipe Tips

Chicken Pieces Instead of Strips – Cut the chicken, peppers and onions into bite sized pieces. It’s works better on tortilla chips

Chicken – Use chicken tenders or breasts. With chicken tenders, the dicing up work is partially done. If using chicken breasts, slice the chicken breasts into strips and then into 1-1 ½ inch pieces.

Bell Peppers – Use your favorite bell pepper variety. Red, Orange, Yellow, or Green all work.

Fajita Seasoning – Make my seasoning or grab your favorite gluten free fajita/taco seasoning and use it instead.

Single Serve Chicken Fajita Nachos

For small families, this method works well.

  1. Make your fajita chicken and vegetables.
  2. Spread a layer of tortilla chips on a microwave safe plate.
  3. Sprinkle some shredded cheese across the chips.
  4. Microwave for 30 seconds on high and melt the cheese.
  5. Add another layer of tortilla chips to the plate.
  6. Top with the fajita chicken mix and additional cheese.
  7. Microwave for an additional minute to melt the cheese.
  8. Remove from microwave and top with your favorite nachos toppings such as shredded lettuce, diced tomatoes, homemade pickled jalapenos, sour cream and cilantro.

Family Style Sheet Pan Fajita Nachos

For larger families this method works well.

  1. Preheat the broiler on the oven.
  2. Cover a large sheet pan with foil or parchment paper for easy clean up.
  3. Place a layer of tortilla chips on prepared pan and cover with shredded cheese.
  4. Place the chips and cheese under the broiler until the cheese starts to melt.
  5. Remove from oven and add another layer of chips, the chicken fajita mix and more cheese.
  6. Return the pan to the oven and broil until the cheese is melted and the chips have browed slightly.
  7. Remove the pan from the oven and top with your favorite nachos toppings or plate up the nachos and let the family add toppings to their own plate.

Ingredients

Fajita Seasoning

  • 1 Tbs. Chili Powder
  • 2 tsp. Cumin
  • ¾ tsp. Salt
  • ½ tsp. Garlic Powder
  • ½ tsp. Onion Powder
  • ¼ tsp. Black Pepper
  • tsp. Dried Oregano

For the Fajita Nachos

  • 2 Tbs. Olive Oil
  • 1 ½ lb.s Chicken Breasts or Tenders, cut into bite sized pieces 1-1 ½ inches
  • 2 Bell Peppers, any color, cut into bite sized pieces 1-1 ½ inches
  • 1 Medium Onion, cut into bite sized pieces 1-1 ½ inches
  • 8 oz. Bag of Shredded Cheese, Cheddar or a Mexican Blend
  • 9 oz. Bag of Tortilla Chips

Instructions

  • Make the Fajita Seasoning by mixing all the fajita spices together in a small bowl
  • Heat olive oil in a large skillet over medium high heat.
  • Once heated, add prepare chicken to the pan.
  • Add 1 Tablespoon of the seasoning mix to the chicken and stir to coat.
  • Cook chicken pieces until they are browned but not quite cooked all the way through.
  • Remove chicken from the pan and place onto a plate or into a large bowl.
  • Add Bell Peppers, Onions and the rest of the seasoning to the pan.
  • Sauté for 3-4 minutes just until they begin to soften.
  • Return the chicken to the pan with the peppers and onions and cook until the chicken is cooked through.
  • Build the nachos and Enjoy.
