A few changes to those gluten filled ingredients makes this casserole Gluten Free. This recipe uses a gluten free cream of chicken soup that is homemade or store bought. Instead of breadcrumbs for the top, gluten free nacho cheese tortilla chips, such as Doritos, is used.

Gluten Free Cream of Chicken Soup – I like to make my own gluten free cream of chicken soup with this recipe, but you can also find gluten free cream of chicken soup online or at Walmart.
Nacho Cheese Chips and Doritos – The ingredients in Doritos do not show any items that have gluten in them. If Doritos cause you any irritation, you could use a brand like Great Value from Walmart, which is marked gluten free on the package.
Salsa – Use your favorite salsa in this recipe. It’s an easy way to adjust the flavor and heat level.
Adding Salt – The ingredients in the recipe are on the salty side so additional salt may not be needed.
Make it 13×9” – Double the recipe ingredients and bake in a 13×9” baking dish for more servings.
Toppings – Serve the casserole with toppings like pickled jalapenos, diced tomatoes, green onions, and sour cream.

Easy Gluten Free Nacho Chicken Casserole
Ingredients
- 2 Cups cubed cooked chicken
- 8 oz. Velveeta, cubed
- 1 10-3/4 oz. Can Gluten Free Condensed Cream Of Chicken Soup, Undiluted
- 2/3 Cup Salsa
- ¼ Small Onion, Chopped
- 1/2 tsp. Garlic Powder
- 1/4 tsp. Black pepper
- Salt to taste, if needed
- 1 9 oz Bag Doritos Or Other Nacho Cheese Tortilla Chips
- Optional: Sliced Jalapeno Pepper And Diced Tomato, Green Onions, And Sour Cream
Instructions
- Preheat the oven to 350ºF.
- Spray an 8×8” baking dish with cooking spray.
- Crush about 7 oz of the chips (most of the bag) and set aside 1 cup for topping.
- Mix the remaining ingredients in a large bowl.
- Stir in the crushed nacho cheese chips.
- Add the mixture to the baking dish and top with reserved tortilla chip crumbs.
- Bake uncovered for 30 minutes until the cheese is melted and the casserole is bubbling and heated through.
- Serve with Sliced Jalapeno Pepper And Diced Tomato, Green Onions, And Sour Cream, if desired.
