Let’s make a classic recipe loved by many. A Gluten Free Chocolate Cream Pie!  This rich and creamy pie is essentially homemade chocolate pudding in a pie crust. It’s made gluten free by using a gluten free vanilla wafer crust for the filling.  It’s so good!

A Chocolate Cream Pie is chocolate pudding filling in a baked crust and topped with whipped cream. This gluten free version has all the components of the classic recipe without sacrificing any flavor or integrity.

Gluten Free Pie Crust Options

The pie is not baked so use a prebaked pie crust.  I use this Gluten Free Vanilla Wafer Pie Crust Recipe for the chocolate cream pie. You could also use this Cheerios Pie Crust or your favorite gluten free pie crust.

Tempering Egg Yolks

Adding a small amount of the pudding mixture to the egg yolks brings the eggs up to temperature. It keeps them from scrambling before being added to the pudding. Passing the mixture through a fine mesh strainer into a separate bowl before putting it into a pie crust makes for a smoother pudding and removes any potential bits of egg that may have cooked.

Unsweetened Chocolate

Unsweetened chocolate is found in the baking aisle of the grocery store as well as online. Look for brands like Bakers and Ghirardelli.

Gluten Free Chocolate Cream Pie with Whipped Cream

Gluten Free Chocolate Cream Pie

Ingredients

  • 1 Cup Sugar
  • ¼ Cup Cornstarch
  • ¼ tsp. Salt
  • 3 Cups Milk
  • 3 Egg Yolks, Slightly Beaten
  • 2 oz. Unsweetened Chocolate, Finely Chopped (2 squares)
  • 2 Tbs. Butter, Unsalted and Softened
  • 2 tsp. Vanilla
  • 1 9" Gluten Free Pie Crust *see notes

Instructions

  • Add Sugar, Cornstarch, chocolate and Salt to medium saucepan (2-3 quart) and whisk to combine.
  • Add Milk and whisk well to combine.
  • Over medium heat, bring the mixture to a boil while whisking constantly.
  • Once the mixture starts boiling, boil for 2 minutes. The mixture will thicken.
  • Remove from heat.
  • Blend a few spoons of the hot mixture into egg yolks to temper the yolks.
  • Add the tempered yolks to the mixture, blending well and continue to cook for a minute or two just until the mixture starts to bubble.
  • Remove from the heat and pass through a fine mesh strainer into a large bowl. This will make for a smoother pudding and remove any potential bits of egg that may have cooked.
  • Add softened butter and vanilla to the mix and pour into prepared pie crust.
  • Cover with plastic wrap directly on the pudding and refrigerate for about 3 hours or until set.
  • Serve with whipped cream if desired.
