You don’t always have time for a big breakfast. Sometimes you have enough time to grab something before running out of the house. Before that happens, make about this Oatmeal Breakfast Cookie recipe!  They’re easy to make and have on hand when you’re short on time and in a rush.

Oatmeal Breakfast Cookies Ingredients

The ingredients in the cookies are filled with fiber and protein for morning energy. Oats, Peanut Butter, Raisins, Cranberries, and Almonds all contribute along with typical cookie ingredients like sugar, eggs, butter and cinnamon.

The cookies don’t have any flour or other ingredients containing gluten in them in them making them gluten free

The cookie ingredients can also be adjusted you personal taste by swapping out the dried fruit, using chunky peanut butter, or switching the almonds for another nut

Use Gluten Free Quick Oats – Not all oats are gluten free because they can be cross contaminated with other grains. Use a Certified Gluten Free Quick Oat like Bob’s Red Mill if you’re gluten free.

Try Using Your Favorite Nut Butter – Use creamy, chunky or honey roasted peanut butter. You can even try other nut butters and see how they come out.

Use Other Dried Fruits – Use all raisins or dried cranberries instead of mixing them. Try dried apricots, or dried blueberries and see how those are in the recipe.

Use Other Spices – Try pumpkin pie spice instead of just cinnamon.

Make them Dairy Free – Use margarine instead of butter for a dairy free version of the cookies.

These cookies freeze well.

To freeze breakfast cookies, wrap individually in plastic wrap and then place in a freezer bag.  Thaw overnight or for an hour before enjoying.

Ingredients

  • ½ Cup Peanut Butter
  • ½ Cup Granulated Sugar
  • ½ Cup Unsalted Butter, Softened
  • ½ Cup Brown Sugar, Packed
  • 1 tsp. Cinnamon
  • ½ tsp. Salt
  • 1 Egg
  • 3 Cups Gluten Free Quick Oats
  • ½ Cup Raisins
  • ½ Cup Dried Cranberries
  • ½ Cup Almonds, Chopped

Instructions

  • Preheat the oven to 350ºF.
  • Grease a large cookie sheet or cover with parchment paper.
  • In a large bowl, cream the peanut butter, sugar, brown sugar, and butter with a hand mixer until the ingredients are completely mixed and the sugars are dissolved.
  • Add Cinnamon, Salt, and Egg and beat for 2 minutes.
  • Stir in the Oatmeal, Raisins, Dried Cranberries, and Almonds.
  • Using a ¼ Cup measuring cup or ice cream scoop, scoop cookies onto prepared baking sheet.
  • Flatten the cookies slightly for more even baking.
  • Bake 15-20 minutes until cookies are set and light golden brown.
  • Remove from cookie sheet and cool completely on wire rack.
  • Store in an airtight container or freeze for longer storage.
