Sometimes, when the universe has a glitch, we have leftover steak or pot roast. There is no sense in good beef going to waste. To put everything back in check, I make a tasty beef hash for breakfast.Beef Hash Image

Beef Hash is a great make at home breakfast option for the family, especially on the weekend. It all cooks in the same pan, is easy to make, has ingredients that most people eat, and is totally customizable.

When left-over beef is scarce, like at my house, go to the deli counter at your grocery store and ask for a couple thick slices of roast beef. Take the meat home and dice it up for your beef hash.  Warning, you are going to get a funny look from the deli counter attendant. Just roll with it. The deli people are used to people asking for thin sliced lunch meats, not a hunk of meat.

I have listed the ingredient amounts but this is a forgiving recipe. Left-over steak (like my marinated flank steak), roast, or corned beef would all be great in this recipe. Any type of onion or color pepper will work. For the family that likes heat, add some jalapeno to the mix. Make it to suit the needs and tastes of your family.

Beef Hash the Whole Family Will Enjoy and Ask For

Use leftover beef roast or deli meat to make an easy hash for breakfast or dinner. Add an egg and take it over the top!

Ingredients

  • 1-1 ½ Cups Left Over Steak or Roast, chopped. I like to use my left-over Flank Steak.
  • 3-4 Red Potatoes diced into 1” Pieces
  • 2-3 Tbs Vegetable Oil
  • ½ Bell Pepper, any color, diced
  • ½ Small Onion, diced
  • 2 or 3 Garlic Cloves, minced
  • ¾ tsp Smoked Paprika
  • Salt and Pepper to Taste
  • 1 Tablespoon Fresh Parsley, Chopped (Optional)
  • Hot Sauce if you like it spicy

Instructions

  • Dice potatoes into pieces around 1 inch.
  • Place potatoes in a microwave safe bowl with about ½ inch of water.
  • Cover potatoes and cook for 4-5 minutes to par cook them.
  • Drain Potatoes.
  • Coat the bottom of a heavy fry pan (like cast iron) with 2-3 Tbs of vegetable oil and heat over medium-high.
  • Add potatoes to pan and cover, allowing them to cook for 5 minutes or so. NO PEEKING.
  • Uncover pan and check the potatoes. They should be starting to brown and crisp up on the bottom. If so leave lid off and stir the potatoes around a bit so the other sides start to brown. If not cover and cook for a few more minutes.
  • Once the potatoes are browned, stir them around and let the other sides brown up.
  • When the potatoes are nice and brown add Bell Pepper, Onion, Salt and Pepper.
  • Continue sautéing, adjusting heat if needed until the bell pepper and onions soften.
  • Next, add garlic and paprika. The garlic just needs about 30 seconds to cook.
  • Add steak and cook for a minute or so. You just want the steak warmed through.
  • Add additional Salt and Pepper if needed and sprinkle Parsley over the top.

Notes

1. Using the microwave to par cook the potatoes allows your potatoes to be cooked through after browning instead of being browned nicely and raw in the middle.
