Stick of Butter Rice

I am always looking for easy ways to cook rice. I’m one of those people that hardly ever cooks it perfectly on the stove. Sometimes I steam it, sometimes I bake it, I even make it in the instant pot using this recipe. Now I’m a fan of microwaving it. Especially when it comes to making this really tasty side dish.

Stick of Butter Rice in the Microwave

Most of the recipes online make this in the oven. While that’s all well and good, I didn’t want to use the oven when I made this version. The rest of the meal was stove top and I had enough going on that putting it in the microwave and just hitting start was a great option.

Most recipes also use a full stick of butter. While I can’t argue the fact that butter is amazing, I didn’t find that a whole stick needed to be used in mine.  A half stick worked well and the recipe is still full of flavor.

For the other ingredients, use your favorite long grain rice, canned mushrooms and gluten free onion soup mix.

Gluten Free Onion Soup Mix

The Onion Soup Mix most people are familiar with is Lipton Onion Soup Mix. Unfortunately, the Lipton Brand is NOT Gluten Free. Here are other options available.

In Store Options

Private Label Onion Soup – I have found that our local grocery store, Food Lion, carries an onion soup mix in their brand that does not have ingredients containing gluten.

Aldi’s – Their label is another brand that does not have ingredients containing gluten.

While those two brands work for my family they may not work for yours. This is a good reminder to read all labels and be open to trying new ingredients and brands when you’re gluten free.

Mrs. Millers French Onion Soup Base – This brand comes in a container and is clearly marked gluten free.

Riega Onion Soup and Dip Mix – Riega is sold by the packet and is clearly marked gluten free.

Rice – Use your favorite long grain rice for this recipe.

Dairy Free – Use margarine in place of butter for a dairy free version.

Add More Flavor – Add a teaspoon of dried parsley or a little garlic powder to boost the flavor even more.

Ingredients

  • 1 Cup Long Grain Rice
  • ½ Stick Unsalted Butter
  • 1 Packet Gluten Free Dry Onion Soup Mix
  • 1 4 oz. Can of Mushrooms Drained

Instructions

  • Place Butter in a large microwave safe casserole dish or bowl
  • Microwave on high for 30 seconds to one minute until butter melts.
  • Add rice to melted butter, stir and cook covered for 1 minute.
  • Stir rice and butter and microwave for an additional minute. This helps toast the rice slightly.
  • Add two cups of water and the onion soup mix to the rice and butter and mix well.
  • Cover dish and microwave on high for 17-18 minutes until rice is cooked.
  • Let rice rest covered for 5 minutes.
  • Fluff with a fork and serve.
