I have to be honest. I find mashed potatoes boring. In my opinion, they always seem to be lacking something. I feel they need something to bring them up a notch. How can I do that? I know, I need to make mashed potatoes on occasion.  They get enough bad press and avoidance. I don’t need to add to the bad press by boycotting them too. Everything in moderation, right? Making Crazy Good Loaded Mashed Potatoes helps me enjoy the mashed potato more and give them that needed something that I think is missing.

Why Plain Mashed Potatoes Bore Me

  • Mashed Potatoes lack taste (Unless I add a half stick of butter to my one serving)
  • They lack color (Unless I smother them with gravy……and the butter)
  • They lack pizazz (Unless I mix in the gravy that was covering the top of them……oh yeah, and the butter)

Why Crazy Good Loaded Mashed Potatoes Make Me Excited

  • The ingredients added provide different levels of flavor that are not in plain mashed potatoes.
  • Bacon, cheese, and chives add color to the otherwise monochromatic starch.
  • The ingredients and flavors remind me of potato skins which are fun to eat.

I have to say that making my mashed potatoes this way makes me want them more often as a side dish.  I’ve also found that leaving out the bacon and chives if you don’t have them on hand is ok too. You’re still going to get a ton of flavor from the other ingredients in the potatoes.

If you find mashed potatoes to be a bore try these potatoes and see if your opinion changes a little.

Loaded Mashed Potatoes

Ingredients

  • 2 lbs. Russet Potatoes
  • ½ Cup Milk
  • ½ Cup Sour Cream
  • ½ Cup Shredded Cheese
  • ¼ tsp Garlic Powder
  • ¼ tsp Onion Powder
  • 2 Slices of Bacon, cooked and chopped
  • 2 Tbs Chives, chopped
  • Salt and Pepper to taste

Instructions

  • Peel Potatoes and cut into cubes about 1 ½ - 2 inches.
  • Put potatoes into a pot, cover with cold water.
  • Bring to a boil add a couple pinches of salt the water and cook until tender.
  • Drain Potatoes and return to the pot.
  • Add Milk, Sour Cream, Cheese, Garlic and Onion Powders and mash until smooth.
  • Stir in Bacon and Chives.
