I think that Pizza Hut Breadsticks are really the first place I remember having breadsticks from a pizza place. A little crispy on the outside but soft and chewy on the inside. Covered in a cheesy, buttery, herby topping that was amazing.

While Pizza Hut has gluten free options for pizza, my wife would rather skip Pizza Hut altogether. I mean, no breadsticks, why bother?  After making this recipe and realizing how much we like these, I think we’re good. I’ll just take a little bit of time and make this amazing Pizza Hut Copycat at home.

Pizza Hut Breadsticks Recipe Inspiration

I can’t take total credit for the recipe. I made gluten free pizza crust from America’s Test Kitchen How Can it Be Gluten Free Cookbook one evening for dinner. If you don’t have their cookbooks, I highly recommend checking them out. They’re great for both Gluten Free beginners and seasoned. Easy to follow directions and overall good recipes. Find both Volume 1 and Volume 2 online.

Anyway, the recipe was for a pan pizza and my wife said “I bet this would also make good breadsticks”. I agreed and added that they would probably taste similar to Pizza Hut. That was enough for both of us and the recipe below is the finished result.

Recipe Tips

Here are some helpful tips for making Pizza Hut Breadsticks a success.

Use a Pizza Stone – Do you have a pizza stone collecting dust? The baking stone helps keep a more reliable oven temperature when baking the breadsticks. You can find one online if you don’t have one or try making them without one. Part of baking gluten free is experimenting!

Cup for Cup Gluten Free Flours are Different – I used Bob’s Red Mill Gluten Free 1 -to-1 Baking Flour for this recipe. Using other flours may work differently in the recipe. If using another flour, you may want to weigh your flour as baking by weight is more accurate.

Oat Flour – Not all brands of oat flour are gluten free. Bob’s Red Mill has one and it can be found here.

Extra Xanthan Gum – I use a bit of extra xanthan gum in my recipe as binding insurance even though Bobs Red Mill has it mixed in already. Feel free to try not using it in your recipe as long as long as your flour already has it as an ingredient.

Psyllium Husk Powder – America’s Test Kitchen uses this ingredient in lots of their gluten free recipes. It helps with binding and creating a courser crumb in baked goods.

13×9” Baking Pan or Rimmed Baking Sheet – A baking pan or rimmed baking sheet will both work for this recipe.

Precutting the Breadsticks – Cut the breadsticks after baking with a pizza cutter or precut them with a bench scraper before baking. Both methods work with little difference in the outcome.

How to Reheat Pizza Hut Breadsticks

  1. Place breadsticks on a baking sheet or aluminum foil.
  2. Reheat Pizza Hut Breadsticks at 350ºF in the oven or toaster oven for 5-8 minutes until the butter starts to sizzle some and the breadsticks are heated through.

Ingredients

Breadstick Ingredients

  • 6 Tablespoons Extra-Virgin Olive Oil, Divided
  • 1 ⅓ Cups Warm Water (110 degrees)
  • 1 Tablespoon Sugar
  • 1 ¼ oz. Packet Instant or Rapid-Rise Yeast (2 1/4 teaspoons)
  • 1 Large Egg, Room Temperature
  • 2 Cups Bob’s Red Mill Gluten Free 1 -to-1 Baking Flour (10 Ounces)
  • Cup Oat flour
  • 1 Tablespoon Powdered Psyllium Husk
  • ¾ teaspoon Fine Salt
  • ¼ teaspoon Xanthan Gum

Breadstick Topping Ingredients

  • 3 Tablespoons Unsalted Butter, Melted
  • ¼ Cup Parmesan Cheese, Grated. I used Kraft
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • ¾ teaspoon Fine Salt

Instructions

  • Adjust oven racks to upper-middle and lower-middle positions and heat oven to 200ºF.Turn off the oven once it reaches 200ºF. This will be for proofing the dough. Do not move to step 2 until oven is off.
  • Brush 3 Tablespoons of Olive Oil in the bottom of the 13×9 inch pan.

Make the Dough

  • Combine warm water, sugar, and yeast in a 2 cup measuring cup or small bowl and let it sit for about 5 minutes until bubbly.
  • Whisk the egg and the remaining 3 Tablespoons Olive Oil into the yeast mixture.
  • In the bowl of a stand mixer fitted with paddle, mix flour, oat flour, psyllium husk, salt, and xanthan gum together on low speed until combined, about 1 minute.
  • Turn the mixer onto low and slowly add yeast mixture mixing until combined and scraping down the bowl as needed. This should bake about 1 minute.
  • Increase speed to medium and beat for 6 minutes until the dough is sticky and uniform, scraping down the bowl once during the mixing process. The dough will resemble cookie dough.
  • Using a rubber spatula, scrape the dough into the prepared pan.
  • Using wet hands, press dough gently and as evenly as possible into the pan to the corners and smoothing out the top.

Raise the Dough

  • Cover the dough loosely with plastic wrap, place on the upper rack of the warmed oven, and let rise for 10 minutes. Do not let plastic touch oven rack or it will melt.
  • After 10 minutes, remove the pan from oven leaving the plastic wrap over it. Let it sit on counter until it has risen by about 50 percent. This will take about 20 minutes.
  • While the dough rises on the counter, place baking stone on lower oven rack and heat oven to 475ºF.
  • After 20 minutes, if desired, cut the dough into 1 ½ – 2” breadsticks while in the pan using a bench scraper. I cut them across the long end of the pan and then once in the middle making 16-18 breadsticks. You can also cut the breadsticks once baked using a pizza cutter.

Bake the Breadsticks

  • Reduce oven temperature to 350ºF.
  • Remove plastic from crust, place on upper rack (not on stone), and bake for 45-50 minutes. The crust will be dark golden brown on top and release easily from the pan. You can rotate the pan halfway through baking if desired.
  • While the Breadsticks bake make the topping.

Make Breadstick Topping

  • Melt 3 Tablespoons of butter and set aside.
  • Mix topping ingredients in a small bowl and set aside.
  • When the breadsticks are finished baking remove them from the oven and turn on the broiler.
  • Brush the melted butter over the breadsticks and sprinkle the topping evenly over them.
  • Place the breadsticks under the broiler for 2-3 minutes to brown the cheese a little and warm the toppings.
  • Serve with your favorite pizza sauce for dipping.
