Spanish Style Crock Pot Round Steak
Ingredients
- 2 Tbs Olive or Vegetable Oil
- 2-3 Lbs. Top Round Steak or London Broil
- 1 Small Onion, Sliced
- 1 Bell Pepper, Any Color, Sliced
- 1 Rib of Celery, Chopped
- 3 Garlic Cloves, Chopped or Sliced
- 1 15 oz Can Diced Tomatoes, Undrained
- 1 Tbs. Worcestershire Sauce
- 1 Tbs. Dry Mustard
- 1 Tbs. Mild Chili Powder
- 2 Tbs. Fresh Parsley, Chopped or 2 tsp Dried Parsley
- ¾ tsp Salt
- ½ tsp Black Pepper
Instructions
- Cut the Round Steak into 4-6 smaller pieces and season the tops with half of the salt and pepper.
- Add 2-3 Tablespoons of oil to a large sauté pan and heat over medium high heat.
- Once the oil is hot, add the beef pieces to the pan seasoned side down and season with the remaining salt and pepper.
- Sear the beef for 3-5 minutes until browned.
- Flip beef over and sear the second side for an additional 3-5 minutes.
- While the beef is searing, place half of the onion, bell pepper and celery in the bottom of the slow cooker.
- Place the seared beef on top of the onion/bell pepper/celery mixture and top the beef with the remaining onion/bell pepper/celery mixture
- In a medium bowl combine the remaining ingredients and pour over the meat and vegetables.
- Cover and cook over low heat for 8 hours.
- Serve over rice.
