Spanish Style Crock Pot Round Steak

- 2 Tbs Olive or Vegetable Oil
- 2-3 Lbs. Top Round Steak or London Broil
- 1 Small Onion, Sliced
- 1 Bell Pepper, Any Color, Sliced
- 1 Rib of Celery, Chopped
- 3 Garlic Cloves, Chopped or Sliced
- 1 15 oz Can Diced Tomatoes, Undrained
- 1 Tbs. Worcestershire Sauce
- 1 Tbs. Dry Mustard
- 1 Tbs. Mild Chili Powder
- 2 Tbs. Fresh Parsley, Chopped or 2 tsp Dried Parsley
- ¾ tsp Salt
- ½ tsp Black Pepper
Cut the Round Steak into 4-6 smaller pieces and season the tops with half of the salt and pepper.
Add 2-3 Tablespoons of oil to a large sauté pan and heat over medium high heat.
Once the oil is hot, add the beef pieces to the pan seasoned side down and season with the remaining salt and pepper.
Sear the beef for 3-5 minutes until browned.
Flip beef over and sear the second side for an additional 3-5 minutes.
While the beef is searing, place half of the onion, bell pepper and celery in the bottom of the slow cooker.
Place the seared beef on top of the onion/bell pepper/celery mixture and top the beef with the remaining onion/bell pepper/celery mixture
In a medium bowl combine the remaining ingredients and pour over the meat and vegetables.
Cover and cook over low heat for 8 hours.
Serve over rice.
- Browning the Beef – Browning and searing the beef before adding it to the crock pot adds additional flavor to the meet. If you’re short on time, this step is optional.
- Fresh Herbs vs. Dried – Use 2 teaspoons of dried parsley if you don’t have fresh.
- Diced Tomatoes – Diced tomatoes come in other varieties such as Italian, Mexican, Chili Ready, and Fire Roasted . Use plain or flavored for what your family likes.
