Have you heard of Bieler’s Broth? I hadn’t until recently. After researching what it was and seeing how easy and healthy it was, I knew I had to try it. I think this simple but nourishing soup is good for what ails you.
What is Bieler’s Broth
Bieler’s Broth is a vegetable based pureed soup that is said to help alkalize, detox, and cleanse the body.
According to the International Foundation for Nutrition and Health, Bieler’s Broth was created by Dr. Henry G Bieler. He was a physician known as a pioneer in alternative medicine and well known for treating Hollywood Celebrities.
What Vegetables Are in the Broth?
The vegetables the broth consists of the following:
- Zucchini
- Green Beans (frozen or fresh)
- Celery
- Parsley
Dr. Bieler believed that this combination of ingredients provided a good number of vitamins and minerals and more specifically, that they help balance the alkaline/acid and sodium/potassium
How to Make Bieler’s Broth
- Add broth and green beans to large pot.
- Bring to a boil over high heat.
- As the broth comes up to a boil prepare zucchini, celery and garlic and add to the pot.
- When the broth and veg begins to boil reduce heat to medium high.
- Cook for 8-10 minutes, stirring in parsley the last 2 minutes of cooking time.
- Remove Soup from heat and using an immersion blender, purée the soup,
- Season with additional salt and pepper, if needed.
Broth Variations
The original version of this soup is very basic using the vegetables listed above and water. I felt my version needed a little more added flavor so I used chicken broth in place of the water and added a few cloves of garlic.
Make this recipe your own by trying different spices and liquids and adapt it to your taste.
Here are a few ideas:
- Use vegetable broth and make it vegetarian.
- Add a little cayenne pepper or crushed red pepper flakes for spice.
- Add Turmeric. It is known to fight inflammation and will add a little color to this very green soup.
- Try using some kind of leafy green like spinach or kale.

Bieler’s Broth
Ingredients
- 4 Small Zucchini, sliced in half lengthwise, and cut into half moons.
- 16 oz. Frozen Cut Green Beans, not thawed
- 4 Stalks Celery, diced
- 1 Bunch Parsley, Partially stemmed and roughly chopped. See Notes
- 3 Cloves Garlic, Peeled and Roughly chopped
- 4 Cups Chicken Broth, Vegetable Broth, or Water
- 1 tsp Salt
- ½ tsp Black Pepper
Instructions
- Add Broth and green beans to large pot and bring to a boil over high heat.

Notes
- Take off the bottom portion of the parsley stems but chop the rest. They have plenty of flavor and get blended up in the soup.
- Use Vegetable Broth or Water to keep the soup Vegan.
- Use fresh green beans, ends trimmed, in place of frozen.
- If you do not have an immersion blender, puree the soup in batches using a regular blender.
