Breakfast is challenging when you’re gluten free, especially when people bring food to the office for sharing. Bagels and doughnuts and muffins, oh my. Tara’s job was having a pot luck breakfast and all I could think about was if there would be anything she could eat. I wanted something that would provide some protein, not be thought of as “gluten free”, and fun to eat. I came up with these Gluten Free Pancake Slider Bites.
What Gluten Free Pancake Slider Bites Offer
- The sausage adds that little bit of protein I was looking for. It keeps mid-morning snacking away for a few more minutes.
- They’re little sandwiches which is the last thing I think of when I hear “gluten free”.
- They’re bite size pancakes with a piece of sausage in the middle that are dipped in warm maple syrup. Sounds like a fun office breakfast option to me.
Tips when making Gluten Free Pancake Slider Bites
- Use a teaspoon size measuring spoon sprayed with cooking spray for putting your pancake batter into the muffin cups.
- After flattening the sausage into the muffin tin, put a small indention in the middle of each patty. Like burgers, this will allow them to bake more evenly and not puff up as much in the middle.
- I used a 24-cup mini muffin pan but you can also find mini muffin pans in a 48-cup size pan like the one online HERE.

Gluten Free Pancake Slider Bites
Ingredients
- 1 Cup Gluten Free Pancake and Baking Mix, like Bisquick Gluten Free Pancake and Waffle Mix,
- 1 Large Egg
- 1 Cup Milk
- 2 Tbs. Oil or melted butter
- 1 lb. Breakfast Sausage
- Maple Syrup for dipping
Instructions
- Preheat the oven to 375°
Directions for Gluten Free Pancake “Buns”:
- In a medium size bowl, mix Pancake batter according to package directions.
- Add a Tablespoon of maple syrup to the batter and mix.
- Spray a mini muffin pan with cooking spray. The pancake batter makes 48 mini buns so you’ll have a total 24 sliders.
- Fill prepared mini muffin cups with 1 tsp of batter.
- Once filled, bake for 8 minutes.
- Remove pan from oven and the “buns” from the pan.
- Cool the pancakes on a cookie grid.
Directions for Sausage:
- Leave oven temperature at 375°.
- After baking the Pancake “Buns” , take about 1 ½ tsp of ground sausage and place into the bottom of the mini muffin cups.
- Flatten the sausage into the cups making a small indention in the center of each. Like burgers this will allow them to bake up evenly.
- Bake sausage for 10 minutes.
- Remove sausage from the oven.
Directions for Assembly:
- Assemble the Gluten Free Pancake Sliders as you would burgers using a piece of sausage between each set of “Buns” and secure each with a toothpick
- Serve Gluten Free Pancake Slider Bites with warm maple syrup for dipping.
