A Few Recipe Notes
- If you don’t like mushrooms, leave them off. Bacon and Cheese still make this Honey Mustard Chicken Amazing.
- If you don’t like Bacon………why not? What’s wrong with you? Ok, it’s still good with Cheese and Mushrooms, but I think bacon makes it better.
- If you’re short on time and cooking bacon isn’t an option, grab a bag of real bacon bits from the store. Those are perfect to use for this recipe in a pinch.

Honey Mustard Chicken with Bacon, Mushrooms, and Cheese
Ingredients
- 1-1.5 lbs. Boneless Skinless Chicken Breasts
- 8 oz. Mushrooms, Sliced
- 2 TB Butter
- 8 Bacon Slices, Cooked
- 1 Cup Shredded Cheese of choice
- Honey Mustard Marinade. Recipe below
- Honey Mustard Dipping Sauce. Recipe below
- Marinade Ingredients:
- ¼ Cup Honey
- 2 Tbs. Yellow Mustard
- 2 Tbs. Vegetable Oil
- 1 Clove of Garlic, Finely Minced, Pasted, or Grated
- ½ tsp. Onion Powder
- ¼ tsp. Paprika
- 3-4 Drops of Liquid Smoke, optional
- 1 tsp. Salt
- ¼-½ tsp Pepper
- 1 Tbs. Very Hot Tap Water
- Dipping Sauce Ingredients:
- ¼ Cup Mayonnaise
- ¼ Cup Honey
- 4 tsp. Yellow Mustard
- Dash of Paprika
- Pinch of Salt and Pepper
Instructions
- Marinade and Dipping Sauce:
- First, prepare the Marinade.
- Mix all the ingredients for the marinade in a small bowl except for the hot water.
- Add very hot water to the marinade and mix again. This will thin out the marinade a little.
- Place chicken in a large zip lock bag or container and add marinade.
- Place chicken in the refrigerator and marinate for 4-6 hours.
- Next, make the dipping sauce.
- Combine all ingredients for dipping sauce, cover and chill.
- Preparing Dinner:
- Remove chicken from marinade and discard marinade.
- Grill chicken over medium high heat for about 5-8 minutes per side or until cooked through. Chicken is cooked through when it reaches an internal temperature of 165°.
- While the chicken cooks, heat 2 Tbs. butter over medium high heat in sauté pan.
- Add mushrooms and some pepper to the pan. Sauté until mushrooms are brown and liquid from mushrooms has evaporated.
- Season mushrooms with salt.
- Transfer cooked chicken to a sheet pan and preheat broiler.
- Top each chicken breast in the following order. Cheese, Two slices of Bacon Crisscrossed, Mushrooms, More Cheese.
- Place Honey Mustard Chicken under the preheated broiler until the cheese melts.
- Serve with dipping sauce.
