Marinade and Dipping Sauce:
First, prepare the Marinade.
Mix all the ingredients for the marinade in a small bowl except for the hot water.
Add very hot water to the marinade and mix again. This will thin out the marinade a little.
Place chicken in a large zip lock bag or container and add marinade.
Place chicken in the refrigerator and marinate for 4-6 hours.
Next, make the dipping sauce.
Combine all ingredients for dipping sauce, cover and chill.
Preparing Dinner:
Remove chicken from marinade and discard marinade.
Grill chicken over medium high heat for about 5-8 minutes per side or until cooked through. Chicken is cooked through when it reaches an internal temperature of 165°.
While the chicken cooks, heat 2 Tbs. butter over medium high heat in sauté pan.
Add mushrooms and some pepper to the pan. Sauté until mushrooms are brown and liquid from mushrooms has evaporated.
Season mushrooms with salt.
Transfer cooked chicken to a sheet pan and preheat broiler.
Top each chicken breast in the following order. Cheese, Two slices of Bacon Crisscrossed, Mushrooms, More Cheese.
Place Honey Mustard Chicken under the preheated broiler until the cheese melts.
Serve with dipping sauce.
