Sausage and Peppers is the answer to the question “What’s for Dinner?”

Sausage and Peppers is an easy gluten free dinner idea for weeknights. This recipe has no sauce and no pasta making it not only gluten free but low carb as well!  Serve this meal with vegetable side dish or a salad to round out the meal.

Ingredients

  • Olive Oil
  • 16-19 oz. Italian Sausage Links, sliced – Sweet, Mild, or Hot
  • 1 or 2 Bell Peppers halved, seeded, and sliced
  • 1 Onion, Halved and sliced into half moons
  • 2 Large Cloves of Garlic,minced
  • 4 or 5 Tablespoons of Fresh Herbs,Parsley, Basil, Oregano or 1 ½ tsp dried Italian Seasoning
  • Salt and Pepper to taste

Instructions

  • Slice sausage links into coins.
  • Heat 2 Tbs Olive oil in a large skillet over medium high heat.
  • Add sausage to skillet and cook until browned and almost cooked through. 8-10 minutes.
  • Remove sausage from skillet and set aside but do not remove drippings.
  • Now add the peppers and onions to skillet and sauté for 5 or 6 minutes until they begin to soften,
  • Next, add garlic and dried Italian Seasoning, if using, as well as Salt and Pepper to taste and sauté for minute or two longer.
  • Add sausage back to pan and cook until sausage is cooked and heated through.
  • Finally, add fresh herbs to Sausage and Peppers.
  • Serve with a side of pasta or dinner salad.
