Ingredients

  • 1/3 Cup Granulated Sugar
  • 3 Tbsp. Cornstarch
  • 3 Tbsp. Unsweetened Cocoa
  • Pinch of Salt
  • 2 Cups Almond Milk
  • 2 Tbsp. Dairy Free chocolate chips, such as the Enjoy Life Brand
  • 1 tsp. Vanilla

Instructions

  • Combine Sugar, Cornstarch, Cocoa and Salt in a 2-quart sauce pan.
  • Whisk in almond milk until blended.
  • Heat mixture over medium heat until boiling, whisking constantly
  • Add Chocolate Chips and continue whisking until the chocolate melts and the mixture thickens slightly. That will take about 1 minute.
  • Remove from heat and stir in Vanilla.
  • Spoon into small bowls or custard cups.
  • Put plastic wrap directly on top of pudding to prevent skin.
  • Refrigerate until serving time.
  • Serve with non-dairy whip cream, if desired.
