Rich & Creamy Dairy Free Chocolate Pudding

- 1/3 Cup Granulated Sugar
- 3 Tbsp. Cornstarch
- 3 Tbsp. Unsweetened Cocoa
- Pinch of Salt
- 2 Cups Almond Milk
- 2 Tbsp. Dairy Free chocolate chips, such as the Enjoy Life Brand
- 1 tsp. Vanilla
Combine Sugar, Cornstarch, Cocoa and Salt in a 2-quart sauce pan.
Whisk in almond milk until blended.
Heat mixture over medium heat until boiling, whisking constantly
Add Chocolate Chips and continue whisking until the chocolate melts and the mixture thickens slightly. That will take about 1 minute.
Remove from heat and stir in Vanilla.
Spoon into small bowls or custard cups.
Put plastic wrap directly on top of pudding to prevent skin.
Refrigerate until serving time.
Serve with non-dairy whip cream, if desired.
