Ingredients

  • 1.5 lbs. Boneless, Skinless Chicken Breasts

Wet Coating Ingredients:

  • ¾ Cup Mayonnaise
  • 2 tsp. Worcestershire Sauce
  • 1 tsp. Lemon Juice
  • ¼ tsp. Garlic Powder
  • ¼ tsp. Onion Powder
  • Salt and Pepper to taste

Breadcrumb Mixture Ingredients

  • ¾ Cup Gluten Free Breadcrumbs
  • 1 tsp. Italian Seasoning
  • ¼ tsp. Garlic Powder
  • ¼ tsp. Onion Powder
  • Salt and Pepper to taste

Instructions

  • Preheat the oven the 375ºF
  • Spray a baking dish or pan with non-stick cooking spray
  • Pound the chicken breasts into an even thickness and cut in half crosswise, if desired
  • In a medium bowl mix the mayonnaise, Worcestershire Sauce, Lemon Juice, Garlic Powder, Onion Powder, Salt and Pepper.
  • In another bowl, mix the Breadcrumbs, Italian Seasoning, Garlic Powder, Onion Powder, Salt and Pepper.
  • Coat each piece of chicken in the wet mixture followed by the breadcrumb mixture and place into the prepared dish.
  • Bake uncovered for 30-40 minutes until lightly browned and cooked through.
  • Serve with your favorite sides.

Notes

  • Chicken Breasts – Pounding the chicken breasts out to an even thickness and cutting them crosswise in half if they’re large helps them cook more evenly.
  • The Breadcrumbs – Use your favorite gluten free breadcrumbs.
  • Seasonings – Use any blend of seasonings you like to flavor the mayonnaise.
  • Oven Temperature – These cook well at both 350ºF and 375ºF making it great if you are cooking other items in the oven along with the chicken.
  • Cooking Times Vary – 30 Minutes is an average cooking time. It depends on the size of the chicken breasts and what temperature the oven is at. One thing I’ve learned is that these can cook a little longer than other recipes. That’s because the mayonnaise keeps them moist and prevents them from overcooking and drying out.
