Ingredients

  • 1 15 oz. Gluten Free Yellow Cake Mix
  • 2 Cups Applesauce
  • 1 Cup Apple, Peeled and Chopped
  • 1 tsp. Ground Cinnamon
  • ½ tsp. Ground Nutmeg
  • ¼ tsp. Ground Ginger
  • ¼ tsp. Allspice Or Cloves
  • ½ Cup Dried Cranberries or Raisins, optional
  • ½ Cup Chopped Walnuts or Pecans, optional

Instructions

  • Grease a muffin pan or line with paper liners
  • Whisk the cake mix and spices together thoroughly.
  • Add the applesauce, chopped apples, and any mix-ins, if using, and mix thoroughly.
  • Fill each muffin tin ¾ full.
  • Bake at 350ºF for 20 - 25 minutes until cooked through and a toothpick comes out clean.

Notes

  • If using muffin liners, cooled muffins will come out of the liners more easily than warm muffins.
  • You may get more than 12 muffins depending on how large your muffins are and if you use mix ins.
