- 2 Cups Mini Marshmallows
- ½ Cup Cold Coffee
- ¾ Cup Heavy Cream
- ¼ tsp Vanilla Extract
Place the marshmallows in a microwave safe bowl and heat on high for 30 seconds.
Whisk coffee into marshmallows until the marshmallows dissolve.
Chill Coffee Marshmallow mix in the refrigerator for 10-15 minutes to cool. This keeps the whipped cream from melting.
In a medium bowl, whip the heavy cream and vanilla extract together until stiff peaks form.
Once the coffee marshmallow mixture is cool, carefully fold whipped cream into coffee mixture
Chill for at least an hour before serving.
Top with Chocolate Covered Espresso Beans or Chocolate Chips if desired.
Recipe Tips
- Use room temperature or cold coffee.
- Try different coffee strengths or flavors for a different taste.
- Use a whisk when mixing the marshmallows and coffee. It will take a couple minutes but they will dissolve.
- Don’t skip cooling the mixture! A cold mixture keeps your whipped cream from melting.
