Gluten Free No Bake Peanut Butter Bars

Gluten Free No Bake Peanut Butter Bars are easy and delicious. I don’t remember Lunch Lady versions ever being this tasty!

Ingredients

  • 1 cup Butter, Melted
  • 5 cups Honey Nut Cheerios, Crushed to make 2 cups
  • 2 cups confectioners’ (powdered sugar)
  • 1 cup + 4 tablespoons peanut butter
  • 1 12 oz. Bag of Semisweet Chocolate Chips

Instructions

  • Mix the melted butter, Honey Nut Cheerios Crumbs, confectioners’ sugar, and 1 cup of the peanut butter until well blended.
  • Press the mixture into an ungreased 13x9 baking dish.
  • In the microwave, melt the chocolate chips with the remaining 4 Tablespoons peanut butter, stirring every 30 seconds until melted. You want the chocolate to be smooth and spreadable.
  • Refrigerate the bars for about an hour until the chocolate has set and the peanut butter mixture has firmed back up.
  • Cut into squares and serve.
  • Store the remaining bars, refrigerated, in an airtight container. They should last a week or so without any problems.

Notes

Making Honey Nut Cheerios Crumbs – Use 5 Cups of cereal to make 2 Cups of crumbs.
Gluten Free Oats – For those of you sensitive to Cheerios use Certified Gluten Free Oats. Grind some up into a crumb consistency and use them in place of the cereal. I do not use oats in my peanut butter bars. Play with the oats amount in the recipe and how much they are processed into smaller pieces until you find an amount and texture you are happy with.
Chocolate Chips – I like semisweet chocolate chips for my recipe. If you like milk chocolate go for it! The choice is yours.
Melting Chocolate – Melt the chocolate in 30 second intervals, stirring each time. The short time intervals will make sure the chocolate doesn’t over heat. It needs to be smooth enough to spread.
Use Wet Hands – Slightly damp hands make easy work of pressing the peanut butter mixture into pan.
Make Them Dairy Free – Use Dairy Free Chocolate Chips and Margarine to make this recipe dairy free. Make Thick Bars – Use an 8x8 or 9x9 pan for thicker peanut butter bars.
