- 1 lb. Cabbage, Chopped
- 1 Large Onion, Chopped
- 2 Large Carrots, peeled and chopped
- 2-3 Stalks Celery, Chopped
- 1 Bell Pepper, Chopped. Any Color
- 3 Cloves of Garlic, Chopped
- 1 15 oz Can of Diced Tomatoes, Undrained
- 1 Bay Leaf
- 2 tsp. Italian Seasoning
- 1/4 tsp. Crushed Red Pepper
- 1/2 tsp. Salt
- 1/4 tsp. pepper
- 6-8 Cups Chicken, Beef, or Vegetable Broth
- 3 Tbs Chopped Parsley
Add all ingredients except for the chopped parsley to the Instant Pot and give it a stir.
Put on the lid and set dial to sealing.
Set the Instant Pot to the Soup function on low pressure
Set time to 20 minutes
After 20 minutes are up turn off Instant Pot and quick release the pressure.
Once the pressure has been released, carefully open up the Instant Pot and remove the bay leaf.
Stir in parsley.
Check seasoning and add additional salt and pepper if needed.
Stove Top Instructions:
- Heat 2 Tbs Oil over medium-high heat in a dutch oven.
- Sauté the onions, carrots, celery, and bell pepper until they just start to soften. 5-8 minutes.
- Add the garlic, bay leaf, italian seasoning, crushed red pepper, salt, and pepper.
- Add canned tomatoes, broth and cabbage.
- Bring to a boil and then reduce to a simmer.
- Cook fo 20-30 minutes until vegetables are tender.
- Remove bay leaf and stir in parsley.
Slow Cooker Instructions:
- Add all your ingredients (except for the the parsley) to the slow cooker.
- Cook for 5 hours on high or 8 hours on low.
- Remove bay leaf and stir in parsley.
