How These Oven Baked Pork Chops Ended up on the Dinner Plate

It was one of those weekdays (which happen more often then they should) when I didn’t know what I wanted for dinner. By mid-morning, I finally decided I wanted pork chops. I had some in the freezer. They would thaw and cook quickly making them a great weeknight option.

I knew wanted oven baked pork chops and they needed some kind of crispy coating on them. Shake and Bake was out since Tara can’t have gluten. I started looking around on Google and Pinterest for inspiration. I can get lost on recipe blogs and websites but I stayed focused and looked for recipes that were quick and easy with only a few ingredients.

After some searching I found a few recipes using grated Parmesan in the coating.  Sounded pretty good to me instead of using all breadcrumbs. I liked the thought of starting them on the stove by browning the first side before finishing them in the oven.  I grabbed the Parmesan, some gluten free breadcrumbs, and other seasonings. What I ended up with was Gluten Free Parmesan Crusted Oven Baked Pork Chops.

How Good Were the Parmesan Crusted Oven Baked Pork Chops?

Most of the time, dinner leftovers end up as Tara’s lunches. Lunch options at work or a restaurant are not always gluten free. I love leftovers and I WANTED these pork chops again.

This meal was too good to pass up. It ended up being my lunch the next day. I was surprised that the pork chops heated up in the microwave as well as they did. Good weeknight dinner and leftover work lunches? This recipe is a keeper!

Ingredients

  • 4-6 boneless pork chops ½”-1” thick
  • ½ Cup parmesan cheese shredded or grated
  • ½ Cup Gluten Free Breadcrumbs
  • 1 tsp Italian Seasoning
  • ½ tsp Roasted Garlic Powder or Garlic Powder
  • ½ tsp Salt
  • ¼ tsp Pepper
  • Olive Oil

Instructions

  • Preheat Oven to 400 degrees.
  • Mix Cheese, Breadcrumbs, Italian Seasoning, Garlic Powder, Salt, and Pepper in a shallow container large enough for dredging the Pork Chops.
  • Pat Pork Chops Dry with a Paper Towel.
  • Coat Pork Chops in Olive Oil and Coat with Cheese and Breadcrumb Mixture. Press the mixture into the meat so it’s well coated.
  • Add a few tablespoons of olive oil to an oven proof skillet, like cast iron, and heat over high heat. You want enough olive oil to coat the bottom of the pan.
  • Brown Pork Chops on one side for 3-4 minutes until golden brown.
  • Flip Pork Chops and transfer skillet to the oven.
  • Bake for 15-20 minutes.
  • Serve with your favorite side dishes.
