Sausage and Peppers is the answer to the question “What’s for Dinner?”
Ingredients
- Olive Oil
- 16-19 oz. Italian Sausage Links, sliced – Sweet, Mild, or Hot
- 1 or 2 Bell Peppers halved, seeded, and sliced
- 1 Onion, Halved and sliced into half moons
- 2 Large Cloves of Garlic,minced
- 4 or 5 Tablespoons of Fresh Herbs,Parsley, Basil, Oregano or 1 ½ tsp dried Italian Seasoning
- Salt and Pepper to taste
Instructions
- Slice sausage links into coins.
- Heat 2 Tbs Olive oil in a large skillet over medium high heat.
- Add sausage to skillet and cook until browned and almost cooked through. 8-10 minutes.
- Remove sausage from skillet and set aside but do not remove drippings.
- Now add the peppers and onions to skillet and sauté for 5 or 6 minutes until they begin to soften,
- Next, add garlic and dried Italian Seasoning, if using, as well as Salt and Pepper to taste and sauté for minute or two longer.
- Add sausage back to pan and cook until sausage is cooked and heated through.
- Finally, add fresh herbs to Sausage and Peppers.
- Serve with a side of pasta or dinner salad.

That is what we had for dinner tonight. I made it and served it over quinoa since we are staying away from bread these days. We cooked it outside instead of heating up the house in this heat (another money saver)!
