Gluten Free Meatloaf Meatloaf is a classic comfort food and everyone has their own meatloaf recipe. Recipes vary in ingredients but most often have egg and breadcrumbs used to bind all the ingredients together. To finish it, some recipes top off the beef with some kind of tomato based sauce.
To make the meatloaf G Free, I made a simple swap out using gluten free bread. I used Canyon Bake House Gluten Free Bread, but any gluten free bread is fine. This Gluten Free Meatloaf lives up to the comfort food title. Once the meatloaf is ready, serve it up with mashed potatoes and a vegetable like Sauteed Green Beans or Roasted Brussel Sprouts you’ve got a meal that will make you feel all warm and fuzzy inside.
Gluten Free Meatloaf
Ingredients
- 1.5 lbs. Ground Beef. I like ground chuck or 80/20
- ¼ of a Large Onion, diced
- ½ of a Red Bell Pepper, diced
- 3 Cloves of Garlic
- 1 TBS Olive Oil
- 1 Large Egg, lightly beaten
- 1 Slice of Gluten Free Bread, processed into bread crumbs in the food processor
- 3 TBS Milk
- 1 TBS Worcestershire Sauce
- 1 tsp Dried Parsley
- ¾ tsp Dried Italian Seasoning
- 1 tsp Salt
- ½ tsp Pepper
Instructions
- Preheat oven to 375°
- Cover a rimmed baking sheet with foil or parchment paper for easy clean-up.
- Heat Olive Oil in a small skillet over medium heat and sauté onion and peppers until they just start to soften.
- Add garlic to pan, sauté for a minute and remove the pan from the heat to cool.
- Put the Ground Beef in a large bowl.
- In a smaller bowl, mix the egg, milk, breadcrumbs, Worcestershire Sauce, Parsley, Italian Seasoning, Salt, and Pepper.
- Combine Beef and ingredients from the smaller bowl together.
- Shape into a loaf on the prepared baking sheet
- Bake for 50 minutes.
- Serve with Mashed Potatoes and these Roasted Brussel Sprouts.
