Honey Glazed Pea Pods and Carrots is a tasty upgrade to a classic vegetable side dish that the kids may even eat!

Ingredients

  • ¾ Cup Water
  • 4 Medium Carrots, Peeled and Sliced
  • 8 oz. Sugar Snap Or Snow Peas, Trimmed
  • 2 Tbs. Butter
  • ½ tsp. Cornstarch
  • 2 Tbs. Honey
  • Salt and Pepper, to taste

Instructions

  • Add water to a medium saucepan and bring to a boil.
  • Add the carrots, cover and cook until tender but a still a little crisp, 10 to 12 minutes.
  • Add the pea pods and cook for an additional 2-3 minutes; drain and set aside.
  • Return the saucepan to the stove and melt the butter, then stir in the cornstarch.
  • Add the carrots, peas and honey to the pan.
  • Season with Salt and Pepper
  • Gently stir over medium heat until the carrots and pea pods are coated with the glaze and heated through; 1-2 minutes.
  • Serve and Enjoy!

  • Pea Pods – Sugar Snap or Snow Peas both work for this recipe.
  • Frozen Pea Pods -  Use frozen sugar snap peas if fresh are too expensive or not available where you shop.
  • Butter and Honey – Adjust the butter and honey amounts to your family’s liking.
  • Steamed Vegetables – If you prefer steamed vegetables over boiled, steam your vegetables and move forward with the recipe as directed.
