In a medium mixing bowl, add the cheese, Italian Seasoning, Garlic Powder, Salt and Pepper and mix to combine.
Spoon some of the cheese mixture into each muffin cup.
Using a muddler or your fingers, press the cheese mixture into the muffin cups.
Add any remaining cheese to muffin cups that have less cheese than others.
Top each cheese filled muffin cup with a little pepperoni.
Bake for 7-10 minutes until the cheese has melted and they are golden brown around the edges.
Remove from the oven and let cool for 10 minutes.
Remove Pizza Bites from the pan and place on serving plate.
Serve with warmed pizza or marinara sauce, if desired.
A toothpick works great for getting the Pizza Bites out of the Muffin Pan.
Customizing the Keto Pizza Bites
- The Cheese - Use an Italian Cheese Blend if you don’t have mozzarella.
- The Italian Seasoning - Substitute a teaspoon each of basil and oregano.
- The Pepperoni - Use Hormel mini pepperoni instead of chopping up larger slices.
- Switch up the Meat - Top you pizzas with sausage instead of pepperoni. Remove a link of sweet or spicy Italian Sausage from its casing. Crumble and brown it up in a fry pan. Use it in place of the pepperoni or better yet, use a combo of pepperoni AND sausage!
- Cheese Only - These things are so good make them with just the cheese and herb mix!
- Roasted Garlic Powder - Roasted Garlic Powder is easy to find in stores and online. I use it as often or more than regular garlic powder. I find it has more flavor. Regular garlic powder works fine in the recipe so don’t worry about not having any at home.
