Monterey Chicken
A family friendly grilled chicken recipe that's a Chili's Copycat. Chicken topped with BBQ sauce, bacon and cheese. Delicious!

- 4 Chicken Breasts
- Olive Oil
- Salt and Pepper
- 1/2 to 1 Cup of your favorite BBQ Sauce. This BBQ Sauce is gluten free as of the time of this post
- 1 Cup of shredded cheese – Monterey Jack. Cheddar or a blend of the two
- 4 Slices of Bacon, Cooked and crumbled
- 1 Small Tomato, diced
- 2 Green Onions, sliced
Coat chicken breasts with a little olive oil and season with salt and pepper.
Grill chicken over medium high heat for about 5-8 minutes or until cooked through. Chicken is cooked through when it reaches an internal temperature of 165°.
Once the chicken is cooked, top each chicken breast with BBQ sauce and shredded cheese.
Remove the chicken from the grill once the cheese has melted.
Top with Crumbled Bacon, Tomatoes, and green Onions and serve.
