We all know that peas and carrots go together like, well, peas and carrots. It’s the classic vegetable pairing kids push around on dinner plates across the country. Let’s try to change that with Honey Glazed Pea Pods and Carrots. This vegetable dish is a little crisp, bright, colorful, and sweetened with a touch of honey. The kids may actually eat their veggies!

Honey Glazed Pea Pods and Carrots

This recipe is an upgrade to the frozen or canned varieties of peas and carrots that get pushed around, stared at, fussed about, and are the last thing to leave the dinner plate.

Spoonfuls of peas and diced carrots look boring and drab on a plate. Diagonally sliced carrots and full pea pods are used in the recipe. This makes for a more appealing side dish that is not only colorful, but full of texture.

The naturally sweet peas and carrots gets and additional boost of sweetness from the honey. This makes it more tempting to both kids and adults.

Recipe Tips

Pea Pods – Sugar Snap or Snow Peas both work for this recipe.

Frozen Pea Pods –  Use frozen sugar snap peas if fresh are too expensive or not available where you shop.

Butter and Honey – Adjust the butter and honey amounts to your family’s liking.

Steamed Vegetables – If you prefer steamed vegetables over boiled, steam your vegetables and move forward with the recipe as directed.

While this recipe isn’t guaranteed to have the kids eating their vegetables and asking for seconds, it does offer an increased possibility. As an added bonus, the peas won’t off the plate onto the floor while being pushed around.

Honey Glazed Pea Pods and Carrots

Honey Glazed Pea Pods and Carrots is a tasty upgrade to a classic vegetable side dish that the kids may even eat!

Ingredients

  • ¾ Cup Water
  • 4 Medium Carrots, Peeled and Sliced
  • 8 oz. Sugar Snap Or Snow Peas, Trimmed
  • 2 Tbs. Butter
  • ½ tsp. Cornstarch
  • 2 Tbs. Honey
  • Salt and Pepper, to taste

Instructions

  • Add water to a medium saucepan and bring to a boil.
  • Add the carrots, cover and cook until tender but a still a little crisp, 10 to 12 minutes.
  • Add the pea pods and cook for an additional 2-3 minutes; drain and set aside.
  • Return the saucepan to the stove and melt the butter, then stir in the cornstarch.
  • Add the carrots, peas and honey to the pan.
  • Season with Salt and Pepper
  • Gently stir over medium heat until the carrots and pea pods are coated with the glaze and heated through; 1-2 minutes.
  • Serve and Enjoy!
