Weight Watchers has a recipe for 5 can soup that is super easy to make but the canned soup in the recipe has pasta in it. This gluten free recipe uses the same components with some optional pantry spices to bump up the flavor. It takes about 5 minutes to make and 10 minutes to heat up.

Beans – Use your favorite canned beans in the recipe. Pintos, Kidneys, Cannellini and Chickpeas all work!

Canned Tomatoes – The are brands of diced tomatoes that already have seasonings. Add a can of these for added flavor.

Swap the Corn – Use canned green beans or mixed vegetables in place of the canned corn to cut a few calories.

Seasonings – Additionalseasonings are not included in the Weight Watchers recipe but make use of the spices in your pantry to get more flavor into the soup.

Ingredients

  • 1 18 oz. Can Gluten Free Garden Vegetable Soup (Ready To Serve)
  • 1 15 oz. Can Diced Tomatoes
  • 1 15 oz. Ounce Can Corn
  • 1 15 oz. Ounce Can Mixed Vegetables
  • 1 15 oz. Can Black Beans, Drained And Rinsed
  • 1 Tbs. Dried Minced Onion
  • 1 tsp. Garlic Powder
  • 1 tsp. Italian Seasoning
  • 1 tsp. Dried Thyme
  • 2 Pinches Black Pepper
  • Crushed Red Pepper, Optional

Instructions

  • Add the contents of the 5 cans to a medium sized dutch oven or saucepan.
  • Add any or all of the spices and seasonings to the pot.
  • Bring to a simmer over medium high heat.
  • Cook for 5-10 minutes until heated through.
