Caprese Salad Skewers Aren’t Just for Summer

Caprese Salad is perfect in the summer when the tomatoes are ripe and the basil is fresh and plentiful. I even make a grilled caprese salad that’s pretty tasty. Once summer ends, finding good tomatoes with flavor goes out the window. They are often unripe and tasteless. The solution is smaller tomatoes.

Grape and Cherry tomatoes are available year-round. When the summer tomatoes are done these little things are still ripe with flavor.  Run to the store and pick some up. Grab a ball of mozzarella cheese and some basil and you’re steps away from bringing a summer favorite into the other three seasons of the year.

Easy Caprese Salad Skewers

Caprese Salad Skewers is an easy appetizer. The tomato, mozzarella, and basil salad go bite size making it a perfect party food.

Ingredients

  • 1 Pint of Grape or Cherry Tomatoes
  • 1 8 oz. Ball of Fresh Mozzarella or Container of Bocconcini
  • 1 .75 oz. Package of Basil
  • Your Favorite Extra Virgin Olive Oil
  • Good Quality Balsamic Vinegar
  • Toothpicks for assembling the Caprese Skewers.

Instructions

  • Cut tomatoes crosswise in half
  • Dice ball of mozzarella into cubes around the same size as the tomatoes.
  • Tear basil leaves into pieces slightly larger than the tomatoes and mozzarella.
  • Thread the ingredients onto the skewer. I like the following order.
  • Tomato half on the bottom which allows your caprese salad skewer to stand.
  • Mozzarella next.
  • Basil on top of the mozzarella to help catch some of the oil and balsamic vinegar.
  • Tomato half on top.
  • As you finish assembling the skewers, stand them up on the platter or plate you’re serving them from.
  • Drizzle the caprese salad skewers with extra virgin olive oil and balsamic vinegar.
